Tofu Nuggets

So, not being able to eat processed vegan food sucks. However, generally being low fodmap means I can adapt recipes just as easily at home, so here's one of my favourites...

Tofu Nuggets (One serving)

Cut 100gms of tofu into your desired shape.

For the tempura batter: 
 - 2 1/2 tablespoons of gf flour
- A tablespoon of dijon mustard
- 2-3 tablespoons of nutritional yeast
- Salt & pepper
- Plus A dash of water and mix into a pancake batter consistency.

Put your tofu peices into the batter and cook on a lightly greased pan - the less olive oil the better

These take five to ten minutes to cook - so it's a really easy recipe to make when you're a bit lazy and can't be bothered.
